Cookies Crumbles Recipes: Bullboar Sausages
I was watching the Food Lovers Guide on SBS last night and saw this recipe. I decided that it was time for me to have a go at making more sausages and these sounded pretty nice. They are a 50/50 combination of beef mince and pork mince with red wine and some spices. I have an electric mincer and used some chuck steak and a pork shoulder for the meat because there is a little bit of fat in the meat but not too much.Ingredients
- 1.5 Kg beef mince
- 1.5 Kg pork mince
- 2 teaspoons ground white pepper
- 250 ml red wine
- 2 teaspoons salt
- 4 cloves of garlic
- 2 teaspoons nutmeg
- 1 teaspoon ground cinnamon
- sausage casings (natural hog casings)
Method
- Place the garlic and red wine in a saucepan and bring to boil then allow to simmer for 5 minutes. remove from the heat and cool
- Mince the beef then mix in half of the red wine. Place the mince in the fridge over night and put the rest of the wine aside for now.
Mix together the salt, pepper, nutmeg and cinnamon.
Mince the pork meat and mix in 1/2 of the spice mix. Place the pork mince in the fridge over night.The next day mix the rest of the red wine into the beef mince and the rest of the spice mix into the pork mince.
Mix the 2 mince meats together and if you have a mincer put the meat through the mincer on the finest blade.
